Ingredients

  • nonstick cooking spray
  • 8 ounces lean andouille sausage, cut into 1/2" chunks, then cut into quarters
  • 8 ounces boneless skinless chicken breast, sliced thin
  • 12 ounces raw shrimp, large size, shelled & deveined
  • 2 tsp Stacey Hawkins Roasted Garlic Oil
  • 3/4 C green bell peppers, 1/2 inch chop
  • 3/4 C celery, sliced thin
  • 1/2 C scallion whites ( set aside a few green tops cut on a bias for garnish)
  • 1 C fresh okra, sliced
  • 1 15 ounce can diced and fire roasted tomatoes
  • 1 tsp Stacey Hawkins Kickin' Cajun Seasoning
  • 1 T Stacey Hawkins Garlic Gusto Seasoning
  • 2 C prepared cauliflower rice

Directions

  1. Prep the meat and the veggies.

  2. Spray a large frying pan with nonstick spray and put over medium high heat.

  3. Add sausage and cook for 1 minute

  4. Add chicken and cook for 5-7 minutes, until meat is opaque and slightly browned.

  5. Add the shrimp and sauté for 2 minutes until pink.

  6. Pour the meat into a bowl and set aside to keep warm.

  7. Place the frying pan back over the heat and add the oil.

  8. Add peppers, celery and scallion whites and sauté for 3-4 minutes until crisp-tender.

  9. Add the okra and sauté for 1 minute more.

  10. Pour the tomatoes into the pan and sprinkle with the Kickin' Cajun and Garlic Gusto Seasoning. Stir to combine.

  11. Bring liquid to a simmer and let cook for 2 minutes. Add the meat back into the pan and stir to combine. Cook for 5 minutes more, reducing the liquid by half.

  12. While simmering, heat the cauliflower rice. Season with Dash of Desperation Seasoning for best flavor!

  13. Divide the mixture into 4 equal portions and serve over 1/2 C of prepared cauliflower rice sprinkled with a few scallion greens for garnish. Enjoy!
