Low Carb Honey Mustard Chicken! This FLAVOR_BURSTING recipe features tender chicken cooked in a skillet so it's got a crispy outside, while being moist, tender and succulently juicy on the inside.  


Top that off with an addictively rich and tangy honey dijon sauce and you'll be in Heaven!  Plus, it's all made in one pan.  Delicious and easy. You can't ask for any more than that!

Ingredients

  • nonstick cooking spray

  • 24 ounces boneless, skinless chicken thighs, excess fat removed.

  • salt & pepper (or Dash of Desperation Seasoning if you want MORE flavor)

  • 4 ounces scallion whites, sliced

  • ½ C chicken stock

  • 1 tsp Stacey Hawkins Rosemary Versatility Seasoning

  • 2 T Stacey Hawkins Deluxe Honey Mustard Seasoning

Directions

  1. Spray a cast iron skillet with nonstick cooking spray and place over high heat. Add chicken when pan is hot and season with salt & pepper (or Dash of Desperation.) Let the chicken cook for on one side for 4 minutes until a lovely brown crust appears.

  2. Flip the chicken over to the other side and add the scallions. Stir to combine and let the chicken cook for an additional 4 minutes.

  3. Add the remaining ingredients and stir to combine (the mustard may take a little bit to dissolve- but it will!). Bring to a boil and then reduce heat to medium. Let the liquid simmer for 6-8 minutes until reduced to a nice glaze and chicken is thoroughly cooked (verify with a meat thermometer)

  4. Remove from heat and serve hot with your favorite green vegetables.
