Summer Salad with Luscious Lemon Vinaigrette

Summer vegetables come alive with this crisp low carb salad recipe! When you combine the best of fresh, ripe summer tomatoes, tender greens, colorful peppers and zesty radishes and toss it all together with a tangy lemon vinaigrette, you wind up with the most beautiful and flavor bursting recipe ever!
Mix and match the vegetables to include what you love most. Just be sure to keep it in line with your program counts if necessary.
¼ C olive oil
2 T Stacey Hawkins Luscious Lemon Oil
1 tsp Dijon Mustard
1 tsp Stacey Hawkins Garlic and Spring Onion Seasoning
1 T fresh lemon juice
¼ - ½ teaspoon Stacey Hawkins Dash of Desperation Seasoning
3 ounces spring lettuce mix
5 ounces assorted colored peppers, sliced
4 ounces radishes, sliced
4 ounces cucumber slices
11 ounces heirloom tomatoes (small variety) sliced or cubed
Luscious Lemon Vinaigrette
Add all ingredients into a small jar (a mason jar or recycled condiment jar works well)
Place the lid on the jar and shake vigorously to combine. Keep refrigerated for up to one week
Prepare all vegetables as directed and place in 4 separate bowls.
Drizzle with 1-2 Tablespoons of vinaigrette, toss (if desired) and serve.
