Lean and Green Recipe Hack: How to Make a Quick and Easy Pan Sauce

Season the meat and sauce in a pan (NOT non-stick) over medium high heat.

Cook until just a few degrees from temperature (so like 160 for chicken which is cooked to 165- the carry over heat will bring it up to temp and not overcook it. Just verify with a meat thermometer before serving to be sure.) Set the meat aside (in this case we're using chicken) and cover it to keep warm. Remove any excess fat and leave the brown stuff (fond) in the bottom of the pan.

Put the pan back over the heat and pour in stock, broth or wine once the pan is hot. Use a spatula to scrape all the bits off the bottom.

Let the liquid reduce by half. Drizzle in some Balsamic Mosto Cotto, stir & pour over your chicken. Voila! Plain, sautéed chicken is turned into a masterpiece!
