Crispy, Cheesy Faux-Tater Tots

Ingredients

2 medium zucchini

1 tsp salt

2 large eggs, beaten

¼ C freshly grated Parmesan cheese

1 C grated mozzarella cheese (any style)

1 tsp Stacey Hawkins Dash of Desperation

1 C Stacey Hawkins Italian Infused Panko
-
ketchup or your favorite dipping sauce
Directions
Coarsely grate zucchini on a box grater and add to a colander. Sprinkle with salt and toss to combine.
Put the colander in the sink or on a plate and let the zucchini sit for 20 minutes to release juices.
When finished, transfer to a clean dish towel and squeeze out all the excess liquid.Preheat oven to 425°F. Line a sheet pan with parchment or a silicone baking pad. Lightly spray with nonstick cooking spray or a smear of olive oil.
Whisk the eggs in a large bowl. Add the zucchini, Parmesan, Mozzarella, Dash of Desperation, and Panko. Mix to combine.
By the tablespoon, scoop and form the tots. Place on the prepared pan. Repeat until done. *
When finished, lightly spray with cooking spray and bake until browned and crisp, about 15 minutes. Serve with your favorite dipping sauce.
Chef's Notes & More
*Stop here if you want to freeze them, placing the sheet pan in the freezer, allowing the tots to freeze solid, and then putting them in a zipper bag or container to store in the freezer until ready to use. When cooking from frozen, do not thaw; add an additional 10 minutes to your cooking time.
