The secret to success with this recipe is to not fully cook the meat in the pan- rather, let the "carry over" cooking that happens while you complete the second part of the dish do the work. Resting not only lets the meat finish cooking, but it keeps the juices and all the FLAVOR in, giving you perfect results every time.

Ingredients

  • nonstick cooking spray

  • 24 ounces lean steak tips (1” pieces)

  • pinch Stacey Hawkins Dash of Desperation Seasoning

  • ½ C beef stock

  • 1 Tablespoon Stacey Hawkins Truffle and Black Garlic Parmesan Seasoning

  • 19 ounces fresh asparagus, after trimming

  • 5 ounces raw button mushrooms, sliced

Directions

  1. Prepare ingredients by cutting the steak into 1” chunks, trimming the asparagus, and slicing the mushrooms.

  2. Spray a cast iron pan with nonstick cooking spray (or use oil if on your program) and place over high heat. When hot, add the steak tips and season with Dash of Desperation Seasoning.

  3. Sauté beef in the pan for 3-4 minutes until a nice crust appears. Remove the beef from the pan, set aside and cover to keep warm.

  4. Place the cast iron pan back on the stove and add the beef stock. Using a wooden spoon, scrape the bits off the bottom of the pan. Add the asparagus and mushrooms and cook on high until the liquid is reduced to half and the asparagus is crisp-tender.

  5. Add the beef back to the pan, season with the Truffle & Black Garlic Parmesan seasoning. Stir to combine, cook 1 additional minute to heat the beef and serve hot.
