These tender, super flavorful and juicy pork carnitas are made really easy with just a few minutes of prep in the Slow Cooker. Using the convenient shortcut of crisping the entire batch at once, you cut tons of time making it a perfect low carb recipe for a weeknight meal. 


Serve it up with some of my Fresh Lime Crema, diced avocado, shredded cabbage (or slaw mix for the win!) and some fresh lime & you have a meal with NO leftovers.

Ingredients

  • 3 pounds boneless pork shoulder

  • ¾ C chicken broth

  • 1 large orange, cut into 8 slices

  • 3 T Stacey Hawkins Phoenix Sunrise Seasoning

  • Toppings of your choice: Tortillas (regular and/or low/no carb) shredded cabbage (or Cole slaw mix), diced avocado, quest fresco, cilantro, lime wedges, fresh lime Crema

Directions

  1. Add the chicken stock, 1 ½ T Phoenix Sunrise Seasoning to the slow cooker. Place the pork on top. Arrange the orange slices around the pork.

  2. Cover with the lid and cook on low until pork is fork-tender, about 8 hours.

  3. Preheat broiler to high heat with oven rack 6” away from the heat. Shred the pork in the slow cooker. Remove pork from the liquid and scatter evenly on a large baking sheet with sides. Sprinkle with remaining 1 ½ T Phoenix Sunrise seasoning. Broil for 6-9 minutes, until pork begins to brown and crisp. Stir gently and cook for 2-3 more minutes to promote more browning.

  4. Serve hot with sides and enjoy!
