Spicy and crisp when raw, the delectable red radish takes on a whole new flavor when roasted! Unlike other root veggies, however, radishes are SUPER low in calories and carbohydrates, making them a perfect side dish. The creamy, sweet, and light flavor pairs well with any protein or makes a great addition to salads.

Directions

  1. Preheat oven to 350° F.

  2. Trim ends and tops of radishes, cut in half (all radish pieces should be about the same size- if you have small ones, leave them whole, big ones should be cut in 1/4, etc.).

  3. Add all ingredients to a large bowl and toss to coat.

  4. Place radishes in an oven-safe roasting dish and place in the oven on the center rack for 30 minutes. If you have a cast-iron skillet, this is the PERFECT time to use it!

  5. Serve hot.
