This simple salad features juicy, garden fresh tomatoes, crunchy cucumbers and sweet, crisp jicama for a slightly unusual side dish that will leave you licking your lips. 


Paired with a simple lime dressing, it's perfect for hot summer days when you crave deliciously easy. Low Carb, Low Cal, Low Fat and as always, Optavia 5&1 Recipe friendly!

Ingredients

  • 2 C (180g) tomatoes, cut into bite size pieces (use regular size, grape or cherry too!)

  • 2 C (240 g) cucumbers, sliced (preferably Kirby or English)

  • ½ C red onion sliced thin (or 50 g scallion whites if restricted) and run under cold water.

  • ½ C (65 g) jicama cut into matchstick sized pieces

  • ½ C (58g) red radishes, sliced

  • 1 medium avocado (6 oz without pit & skin) cut crosswise into slices

  • 1 tsp Stacey Hawkins Deluxe Honey Mustard

  • Fresh cilantro leaves for garnish

  • 4 T Stacey Hawkins Luscious Lemon Oil

  • 3 T fresh lime juice

  • ½-1 tsp Stacey Hawkins Tangy Lemon Salt

Directions

    1. Whisk together oil, juice and salt. Set aside to let flavors blend.

    1. Arrange tomatoes, onion/scallions, cucumber, jicama, radishes and avocado on a serving platter.

    2. Drizzle with vinaigrette. Sprinkle with fresh cilantro leaves and a pinch of Tangy Lemon Salt. Enjoy!
