Ingredients
4 boneless skinless chicken breasts (or thighs)about 1.5 lbs.
1 T Stacey Hawkins Luscious Lemon Oil
½ C pure pomegranate juice (no sugar added)
2 T Stacey Hawkins Balsamic Mosto Cotto
1 T honey, or sugar free equivalent
1 T Stacey Hawkins Garlic & Spring Onion
½ tsp Dash of Desperation
⅓ C pomegranate arils
Directions
Sear the chicken: Heat olive oil in a large skillet over medium heat. Season chicken and sear 4–5 minutes per side, until golden brown and cooked through. Remove from the pan and set aside.
Make the glaze: In the same skillet, add pomegranate juice, balsamic vinegar, honey, and garlic. Whisk and simmer 5–6 minutes, until thickened and syrupy.
Coat and finish:
Return chicken to the pan, spoon glaze over the top, and simmer another 2–3 minutes, turning to coat evenly.Cook & Fluff the quinoa:
Toss cooked quinoa with olive oil, lemon juice, herbs, and a pinch of Dash.Assemble:
Plate the quinoa, top with glazed chicken, and drizzle with any remaining sauce. Garnish with pomegranate arils and fresh herbs. Enjoy!
