Juicy chicken breasts are seared to golden perfection, then coated in a glossy pomegranate-balsamic glaze that tastes as good as it looks. Served over light, lemony quinoa and finished with a sprinkle of fresh herbs and pomegranate arils, this dish is pure nourishment and elegance in every bite.

Ingredients

  • 4 boneless skinless chicken breasts (or thighs)about 1.5 lbs.

  • 1 T Stacey Hawkins Luscious Lemon Oil

  • ½ C pure pomegranate juice (no sugar added)

  • 2 T Stacey Hawkins Balsamic Mosto Cotto

  • 1 T honey, or sugar free equivalent

  • 1 T Stacey Hawkins Garlic & Spring Onion

  • ½ tsp Dash of Desperation

  • ⅓ C pomegranate arils

Directions

  1. Sear the chicken: Heat olive oil in a large skillet over medium heat. Season chicken and sear 4–5 minutes per side, until golden brown and cooked through. Remove from the pan and set aside.

  2. Make the glaze: In the same skillet, add pomegranate juice, balsamic vinegar, honey, and garlic. Whisk and simmer 5–6 minutes, until thickened and syrupy.

  3. Coat and finish:
    Return chicken to the pan, spoon glaze over the top, and simmer another 2–3 minutes, turning to coat evenly.

  4. Cook & Fluff the quinoa:
    Toss cooked quinoa with olive oil, lemon juice, herbs, and a pinch of Dash.

  5. Assemble:
    Plate the quinoa, top with glazed chicken, and drizzle with any remaining sauce. Garnish with pomegranate arils and fresh herbs. Enjoy!
