This flavor bursting, time-saving recipe harnesses the power of the air fryer to effortlessly transform chicken breasts into a meal you'll love in just minutes.


Our crispy Lemon Pepper Panko combines with chopped pistachios to give a nutty, satisfyingly delicious crunch.  But what your mouth will REALLY be Wow'd by is the tender juicy chicken wrapped in succulent flavors of lemon, garlic, parsley & other herbs in our Skinny Scampi Seasoning. Serve with a quick arugula salad and a squeeze of fresh lemon for a meal fit for a Queen, yet easy enough for a weeknight winner! 


CHEF'S TIP: An absolute MUST for this recipe is an Air Fryer Paper Liner- with them this recipe will be crisp, AND all the panko will not fall through the grates. You can find them HERE.

Ingredients

  • 1 egg

  • 2 pounds boneless, skinless chicken breasts, thinly sliced

  • 1 T Stacey Hawkins Skinny Scampi Seasoning

  • ½ C Lemon Pepper Panko

  • 4 T chopped pistachios

  • nonstick cooking spray or olive oil spray

Directions

  1. Preheat air fryer to 375° F. Line the air fryer basket with a liner.

  2. Whisk together egg and 1 T of water in a small bowl. In a separate bowl, combine together Lemon Pepper Panko and Skinny Scampi Seasoning

  3. Dip a fillet into the egg mixture, then lightly coat in panko mixture. Repeat with all fillets, arranging them in the air fryer basket. Give the fillets a quick coat of nonstick cooking spray (or olive oil spray) If you need to, work in batches.

  4. Cook for 5-7 minutes. Carefully flip the fillets over, spray with cooking spray and then sprinkle on the pistachios. Gently press them into the chicken with your fingers to make them stick) Cook an additional 5-7 minutes until chicken is fully cooked (or reaches in internal temp of 160° F.) ** Please note that your cooking time may vary depending on the thickness of the chicken. Keep an eye on it so it does not over cook and dry out.

  5. While chicken is cooking, make the arugula salad by placing the greens in a bowl, drizzling with a little Stacey Hawkins Luscious Lemon Oil, a pinch of Dash of Desperation and spritz of lemon. Top with fresh grated Parmesan if desired.

  6. Serve with fresh lemon wedges and enjoy!
