Ingredients
- 1 pound pasta- any variety good for salad
- 3 C sliced cucumbers
- 1 pint cherry or grape tomatoes cut in half
- 1 can (15 oz) chickpeas, drained
- 1 C Kalamata olives
- 6-8 oz feta cheese, crumbled
- 1 T Stacey Hawkins Mediterranean Seasoning
- 1 C Blistered Tomato Vinaigrette**
- Stacey Hawkins Cyprian Sea Salt to taste
Directions
Cook the pasta according to the package directions, ensuring it is cooked in salted water (use table salt, not Cyprian salt). Drain and rinse under very cool water to stop the cooking process and prevent it from becoming mushy.
While the pasta is cooking, add cucumbers, tomatoes, olives, and chickpeas to a large enough bowl to hold the pasta. Add 1C of the vinaigrette* and toss to coat.
When the pasta is cool, add it to the mixture. Using two large spoons, gently “pull” the vinaigrette and veggies up through the pasta. Season with salt if needed. Sprinkle cheese over the top, serve, and enjoy!
