Who says you can't have flavor on a low carb diet? This easy Foil Baked Chicken and Mixed Vegetables recipe is not only BURSTING with flavor, it's full of color and as pretty to eat as it is to devour.  


Use a variety of low-glycemic vegetables (no corn, peas, etc.) to make this delicious meal in just minutes. Perfect for those on the Optavia Diet or Optavia 5&1 plan, yet we guarantee that anyone you cook for will LOVE It!

Ingredients

  • 1 ¾ pounds boneless, skinless chicken breast

  • 6 C raw mixed vegetables, trimmed and sliced

  • 1 T Stacey Hawkins Tuscan Fantasy Seasoning

Directions

  1. Preheat oven to 350° F. Make 4 foil packets by cutting 12” pieces of foil from the roll.

  2. Place 7 ounces of raw chicken in each foil packet*

  3. Add ¼ of the vegetable mixture over each piece of chicken.

  4. Sprinkle equal amounts of seasoning over each packet. Seal the foil packets and place on a sheet pan. Arrange in such a way that they are not overlapping.

  5. Bake for 20 - 25 minutes, depending on the thickness of the chicken. Verify chicken has reached 160° F with a meat thermometer.

  6. Arrange the contents of the foil packets on a plate and enjoy!
