Flavor bursting, low carb and SO easy to put together! This Low Carb Chicken Fajita Casserole is as beautiful and colorful as it is delicious. Loaded with juicy peppers, tender scallions and of course... gooey cheese all mixed together with our signature, rich flavors of Phoenix Sunrise Seasoning, this will become a family favorite for sure.
You can have it prepped and ready to go in just 10 minutes (and can even make it in the morning to bake when you get home!) Keto friendly, Optavia friendly and kid-approved, you couldn't ask for a better back-to-school favorite.

Ingredients
28 ounces thinly sliced chicken breasts
1 T Stacey Hawkins Phoenix Sunrise Seasoning, divided
10 ounces sliced bell peppers, assorted colors (about 2 large peppers)
1 C scallions, sliced thin (reserve some greens for garnish if desired)
1 tsp Stacey Hawkins Dash of Desperation Seasoning
½ C reduced fat cheddar cheese
½ C reduced fat mozzarella cheese
Directions
Preheat oven to 350° F. Lightly grease a baking dish with nonstick cooking spray.
Add chicken breasts in a single layer in the bottom of the baking dish. Sprinkle with ½ of the Phoenix Sunrise Seasoning.
Top chicken breasts with pepper and scallions. Sprinkle with remaining Phoenix Sunrise seasoning and Dash of Desperation Seasoning
In a small bowl, combine the cheeses and then sprinkle over the peppers and onions. Bake for 20-30 minutes, depending on the thickness, until chicken is cooked and casserole reads an internal temperature of 165° F. Serve immediately and enjoy!
