This quick and easy recipe for Down Home Butter Chicken with Zucchini noodles is as delicious as it is foolproof. Golden tender chicken pieces and zoodles are simmered in a sauce made with butter, lemon, Dijon and of course, flavor bursting herbs and spices.
The sauce is so good you'll want to lick the plate! Best part is it is a low carb recipe, a paleo recipe and of course an Optavia recipe. Perfect for anyone on the program or doing Optavia 5&1.

Ingredients
28 ounces boneless, skinless chicken breast cut into strips
½ tsp Stacey Hawkins Dash of Desperation Seasoning
1 pound zucchini noodles
2 T butter, divided
1 lemon
1 T Dijon mustard
⅓ C chicken broth
1 T Stacey Hawkins Lit Garlic Seasoning (for a spicy, more flavorful recipe)
OR
1 T Stacey Hawkins Garlic and Spring Onion Seasoning (for mild)
Directions
Season the chicken strips with Dash of Desperation Seasoning. Set aside.
Make the zucchini noodles (if not using prepared) and set aside.
Melt ½ T butter in a large skillet over medium high heat. When melted, add the chicken and cook for 3 minutes until slightly browned.
Add the remaining butter, juice of one half of the lemon (slice the other side for garnish) Dijon mustard, chicken broth and Stacey Hawkins Garlic Seasoning of your choice. Stir to combine. Bring to a simmer and allow the sauce to reduce for 2-3 minutes, stirring regularly.
Add the zucchini noodles and toss to coat in the sauce, leaving the pan on the heat for 2-3 minutes to warm the zucchini. Divide into 4 equal portions and serve warm with sliced lemon for garnish.
