Ingredients

  • 2 pounds chicken thighs

  • 2 Tablespoons Stacey Hawkins Happy Buzz Coffee Rub

  • 1 C Greek yogurt- plain unflavored

  • ¼ C apple cider vinegar

  • ½ to 1 tsp Stacey Hawkins Kickin’ Cajun Seasoning

  • 1 T brown mustard

  • ½ tsp Stacey Hawkins Dash of Desperation Seasoning

  • 2 teaspoons prepared horseradish

  • 1 teaspoon Worcestershire sauce

Directions

  1. Preheat oven to 350° F. Sprinkle seasoning over the chicken and place it on a cookie sheet.

  2. Bake for 25-30 minutes until chicken is at an internal temperature of 160° F. Remove from the oven, let it rest and serve when temp is 165° or greater (about 5 minutes or so.)

  3. While chicken is baking, make the sauce. (Although, the longer it sits, the better it tastes so if you can, do it in the morning or even the day before!)

  4. Add all the ingredients to a blender (or a large container if using a stick blender). Pulse to mix thoroughly and store in an airtight container for up to 2 weeks in the fridge.

  5. Drizzle 1 T of sauce over 5 ounces of chicken and enjoy!
