Believe it or not, there are lots of ways to take whole, fresh, low carb ingredients and turn them into creamy, decadent comfort food on a low-cal budget. I bring you Creamy Skillet Chicken and Asparagus.


Not only is this a Lean and Green recipe, it also fits into many diet programs and is incredibly versatile! That's super important in this day and age of "use what you have on hand."


This recipe is designed to be interchangeable- you can substitute the protein choice (use lean chunks of chicken, pork, beef, etc.) and you can also swap out the vegetable for whatever you have in the fridge. Imagine creative combinations like pork, mushrooms and green beans (remember, you don't need to stick to just 1 veggie!) or chicken and summer squash. The possibilities are truly endless.


This quick dish is not only SUPER easy to make, it is incredibly delicious, flavorful and filling. It's also a one skillet meal which makes for a quick and easy clean-up as well.


It's a perfect low carb meal whatever program you are on, or not! This is great served with cauliflower rice, low carb alternative noodles, wilted spinach or even a salad. For those not on program, I highly recommend egg noodles or spaetzle.

Ingredients

Directions

  1. Add oil to a large skillet and heat over medium high heat.
  2. When hot, add chicken breasts and cook for 7-10 minutes, stirring occasionally. The chicken should be slightly browned.
  3. Pour the broth into the pan and, using a spatula, scrape all the browned bits (fond) off the bottom of the pan.
  4. Add garlic seasoning, cream cheese and asparagus. Turn the heat to high.
  5. Stir the ingredients continually, allowing the cream cheese to melt evenly into the sauce. Bring to a boil and simmer until a thick, rich sauce has formed. Divide into 4 equal portions, sprinkle with a little Dash of Desperation and serve hot.
