This quick and easy dish is SO flavorful and SO amazing you won't believe it actually works on a low carb diet!
Here, we combine tender and juicy chicken with a rich and creamy Alfredo sauce that's hard to beat. Pile it up on hearts of palm noodles or zucchini noodles and you've a dinner made in Heaven!

Ingredients
1 ¾ lbs. boneless skinless chicken breasts approx. ½” thick
1 tsp Stacey Hawkins Dash of Desperation Seasoning
nonstick cooking spray
1-2 C low sodium chicken broth, divided
8 T low fat cream cheese cut into pieces
1 T Stacey Hawkins Garlic and Spring Onion Seasoning
OR
1 T Stacey Hawkins Lit Garlic Seasoning (for a spicy version)
4 C hearts of palm noodles - or- zucchini noodles
2 oz Parmesan cheese, finely grated, divided
Directions
Prepare hearts of palm noodles by rinsing in water and then draining well. Season with a pinch of Dash of Desperation seasoning and set aside.
Spray a large skillet with nonstick spray and place over medium-high heat. Season chicken with Dash of Desperation seasoning and add to pan. Cook, turning occasionally until golden brown and cooked through, about 4-6 minutes per side. Transfer to a cutting board, place an upside down plate over it to keep it warm and let rest.
In the same skillet over medium high heat, combine 1 ½ C broth and Garlic Seasoning and bring to a simmer. Add cream cheese and whisk together until melted. Add ¾ of the Parmesan cheese and additional broth as needed to bring the sauce to desired thickness. When the sauce is hot and ready, add the hearts of palm noodles (or zucchini noodles) and toss to coat, cooking for just 1 minute more to heat noodles.
Divide noodles into 4 equal portions and slice with 6 ounces of sliced chicken breast. Enjoy!
