If you’re a fan of low carb or Keto style recipes, then you’re probably familiar with Cloud Bread- the light as air and oh so flavorful “bread” created with egg whites. 


Now there’s a new wave of recipes featuring protein rich eggs- and this one doesn’t waste the yolks! Meet Cloud Eggs, these power-packed gems taking breakfast by storm. Endlessly customizable, they can be seasoned with a ton of different herbs and spices, mixed with different hard cheeses and meats and generous sprinklings of pepper, salt and fresh herbs. 


They are quick, crowd friendly and can be made in just a matter of minutes (especially if you do a little prep ahead of time.) They’re perfect for brunch, lunch or any Lean and Green Meal!

Directions

  1. Preheat oven to 450° F.

  2. Line a cookie sheet with a silicone baking mat (or parchment paper) and lightly spray with nonstick cooking spray.

  3. Separate the egg whites and yolks.  I find it easier if you put each yolk in a separate container as they can then be “slipped” into the clouds later on.  You can put them in one bowl and then carefully spoon them out one by one in the following step as well.

  4. Using an electric mixer, whip the whites into stiff peaks, about 3 minutes.

  5. Gently fold the Parmesan cheese and SH Tuscan Fantasy Seasoning into the egg whites using a spatula.   

  6. Spoon the egg white mixture on to the prepared baking sheet into 6 mounds.  

  7. Using the back side of a large tablespoon, gently indent the centers to form nests for the egg yolks. 

    If you’re making these for a crowd, you can stop here and place the cookie sheets in the fridge for up to one hour.  You may, however, need to bake them slightly longer as it will take some time to warm up the cookie sheets.  Keep an eye on them so they do not overtake.   

  8. Bake in the oven until lightly golden brown, about 3 minutes.

  9. Remove the clouds from the oven and gently add one yolk into the center of each puff.  

  10. Season with salt and pepper to taste, or better yet, give them a pinch of Stacey Hawkins Dash of Desperation Seasoning to make them WOW.

  11. Bake until the yolks are set, about 3 minutes more.  Garnish with fresh herbs if desired.

  12. Serve hot.
