Everybody LOVES appetizers! But let's face it, they can totally ruin you if you're not careful. I've put together a collection of my favorite low-carb apps, including this mouthwatering recipe for Low Carb Chicken Satay Skewers and Peanut Sauce that will leave you AND your party clothes happy šŸ˜‹šŸ˜‹ My mouth is watering just thinking about this one!

Ingredients

    • 3 T smooth peanut butter (no sugar added)
    • 3 T reduced sodium soy sauce
    • 2 T rice wine vinegar
    • 1/4 tsp Stacey Hawkins Brightening Blend (or 2 T orange juice if not carb-conscious)

    • 2 T water

    Directions

    1. Add all the sauce ingredients to a microwave safe bowl. Microwave on high for 30 seconds and then whisk together. (Heating it up a bit first helps the peanut butter to better incorporate.)[ Repeat the process until sauce is slightly thick and smooth. Reheat just before serving.
    2. Slice the chicken breasts into thin strips, cutting the shorter way across and not lengthwise.\
    3. Place the chicken in a bowl and drizzle with Roasted Garlic Oil. Sprinkle with Tasty Thai Seasoning and set aside for as little as 15 minutes, up to all day to let the flavors marinade. Do put in the refrigerator, covered if leaving for more than 15 minutes.
    4. When ready to cook, preheat outdoor grill to medium high heat and skewer chicken strips on individual skewers. (Alternately, you can cook 4-6" under a broiler for approximately the same time.)
    5. Place the skewers on the grill and cook for 2-4 minutes on each side until cooked through. Time will vary with thickness and grill differences. Watch them carefully, however, and do not overcook.
    6. Warm up the sauce and serve on a platter with the skewers. Enjoy!
