These Chicken Meatballs with Lemon Dill Yogurt Sauce are the kind of easy, flavor-packed weeknight dinner that makes you feel like you’ve absolutely got your life together — even when you don’t.


Tender, juicy chicken meatballs are baked until golden, then paired with a bright, creamy lemon dill yogurt sauce that tastes fresh, light, and downright irresistible. It’s simple enough for a busy Tuesday, but delicious enough to feel a little special.


Even better, this is a perfect double-batch recipe, so you can stash some in the freezer for a future night when cooking feels like too much.


Serve them with roasted potatoes, rice, and/or a crisp cucumber salad for a complete meal that feels effortless, satisfying, and so, so good.

Ingredients

    • 1 T olive oil (or SH Roasted Garlic Oil for even MORE flavor)

    • 1 ½ pounds ground chicken*

    • 1 large egg

    • 2 tsp Stacey Hawkins Garlic Gusto Seasoning

    • 1 T Stacey Hawkins Mediterranean Seasoning

    • ¼ tsp salt and pepper (or 1 tsp SH Dash of Desperation)

    • 1 C whole milk Greek Yogurt

    • 1 T fresh lemon juice, plus 1 tsp lemon peel

    • 2 tsp Stacey Hawkins Citrus Dill Seasoning

    Directions

    1. Heat oven to 400°F. Line a baking sheet with parchment paper or a silicone baking sheet. Drizzle with oil and set aside.

    2. Add egg to a large bowl and lightly whisk with a fork. Add remaining meatball ingredients. Using your hands, combine well.

    3. Using a soup spoon, form about 2 T of the meat mixture into balls. Drop them one at a time onto the baking sheet & repeat until finished. (You’ll get about 30 meatballs.)

    4. Bake the meatballs until cooked through, about 15 minutes.

    5. While the meatballs are cooking, whisk together the yogurt, lemon, peel, and Citrus Dill. Season with salt and pepper. Set aside until the meatballs are finished cooking. (You can make this up to a day in advance.)

    6. Serve the meatballs hot with the sauce. Enjoy!
