Delicious and elegant enough to serve for an award-winning dinner, this dinner is actually easy enough to put on your weeknight rotation. Combining together the flavors of lemon, artichoke, spinach and dill to create a rich, creamy sauce, it takes boring chicken breast to new heights of flavor. 


 A low carb, lower calorie dish, it's perfect for anyone following a low carb diet, looking for Optavia recipes or recipes that help with weight loss or maintenance on Ozempic recipes, Wegovy and other diet programs.

Ingredients

  • 4 teaspoons Stacey Hawkins Luscious Lemon Oil

  • 1 ¾ pounds thin sliced chicken breast

  • 1 Tablespoon Stacey Hawkins Farmhouse Chicken & Veggie Seasoning

  • 1 C chicken broth

  • 1 T fresh squeezed lemon juice

  • 1 teaspoon Stacey Hawkins Citrus Dill Seasoning

  • 4 T low-fat cream cheese cut into ½” chunks

  • 1 14 ounce can artichoke hearts in water, drained and chopped

  • 4 ounces fresh spinach, roughly chopped

Directions

  1. Sprinkle the chicken breasts with the Farmhouse Chicken Seasoning.

  2. Add the Lemon Oil to a nonstick frying pan over medium high heat. Add the chicken breasts and cook for 6-8 minutes until cooked through, flipping the chicken over halfway through cooking.

  3. Transfer the chicken to a plate and cover to keep warm. Put the pan back on the heat and add the chicken broth, Citrus Dill and lemon juice to the pan. Bring to a simmer and add the cream cheese. Whisk together until combined. Toss in the artichokes and spinach. Stir until spinach is wilted. Add chicken back to the pan and simmer for just a minute or two to thicken the sauce. Serve hot.
