One dish dinners rock in my book! Especially when they're flavorful, easy and work with the Optavia Diet, Optavia 5 &1 diet and are a low carb recipe to boot!


This quick and easy dinner features chicken and green beans, with a spicy (but not too spicy) and ooey... gooey, cheesy twist.


Just add to the dish and bake and you've got a complete Lean and Green meal that everyone will love!

Ingredients

  • 1 pound fresh, French style green beans (the small, thin ones)* ends trimmed

  • ⅓ C low sodium chicken broth

  • 2 pounds boneless, skinless chicken breasts, thinly sliced (can use tenderloins too)

  • 1 Tablespoon Stacey Hawkins Lit Garlic Seasoning, divided

  • 1 C (16 Tablespoons) low-fat shredded mozzarella cheese

Directions

  1. Preheat oven to 375° F.

  2. Place green beans in a single layer in the bottom of a 9x12 baking dish and pour the broth over the beans.

  3. Layer the chicken over the green beans and sprinkle with ½ of the Lit Garlic Seasoning.

  4. Sprinkle the cheese over the chicken and then with the remaining Lit Garlic Seasoning.

  5. Cover with foil and poke 4 holes in the top of the foil to let the steam vent.

  6. Bake for 35-40 minutes until chicken is thoroughly cooked and beans are crisp tender. Serve hot.
