This recipe for Char Broiled Zucchini with Garlicky Yogurt Sauce was inspired by the fine folks at America's Test Kitchen- a company I adore!  


When it came across my desk last week, I have to tell you I was intrigued. Always looking for Low Carb recipe ideas, Lean and Green Recipes and those that support people on low carb diets or on the Optavia 5 and 1 recipe program- I just knew I had to Wow! it and make it work.  


The key is in smashing the zucchini- that's right- smashing it! The end result is a range of textures that delights the mouth, and makes for a decidedly different and incredibly flavor-bursting zucchini dish.

Ingredients

    • 1 ¾ pounds zucchini (about 1- 1 ½” diameter works best)

    • 1 Tablespoon lemon juice

    • 4 tsp Stacey Hawkins Roasted Garlic Oil

    • pinch Stacey Hawkins Dash of Desperation Seasoning (or more to taste)

    • ½ C low-fat Greek Yogurt (8 Tablespoons)

    • 1 teaspoon Stacey Hawkins Sicilian Tomato and Herb (for a low or no salt option)

    • or

    • 1 teaspoon Stacey Hawkins Lit Garlic Seasoning

    • 2 Tablespoons water

      1. Place oven rack about 5” from the broiling element and heat broiler.

      2. Trim ends off the zucchini. Using a meat mallet or a rolling pin, gently, but firmly smash the zucchini until it is somewhat flattened and cracked lengthwise. Break each zucchini into 2-4 large pieces. Transfer all zucchini (bit and all) into a bowl. Drizzle with Roasted Garlic Oil and lemon juice and toss to coat.

      3. Place zucchini in a single layer and skin side down on a foil lined baking sheet. Season with Dash of Desperation Seasoning and broil until zucchini are lightly charred in spots, about 9-12 minutes, rotating the pan half way through broiling. Set aside and let the zucchini cool for 15-20 minutes.

      1. While the zucchini is resting, make the sauce by combining all the ingredients together in a small bowl. Let it rest for 10 minutes or longer to let the flavors meld.

      2. Smear 2 Tablespoons of the Garlicky Yogurt Sauce on a plate and top with ¼ of the cooked zucchini. Season with a pinch of natural sea salt if desired. Repeat the process with the remaining ingredients and enjoy!
