Ingredients

    blank

    • 1 ½ pounds boneless skinless chicken breast in 4 equal size pieces

    • 1 tsp Stacey Hawkins Dash of Desperation Seasoning

    • 4 T Stacey Hawkins Balsamic Mosto Cotto

    blank

    • 8 oz Feta cheese

    • ¾ C 2% Greek Yogurt

    • 2 tsp Stacey Hawkins Luscious Lemon Oil

    • 1 T Stacey Hawkins Mediterranean Seasoning

    blank

    • 2 t Stacey Hawkins Roasted Garlic Oil

    • 1 tsp Stacey Hawkins Dash of Desperation Seasoning

    • 1 pints grape tomatoes (washed and dried well)

    Directions

    1. Season chicken with Dash of Desperation Seasoning.

    2. Spray a large frying pan with nonstick spray and heat over medium high heat. Cook chicken on both sides until lightly browned and a temperature of 150° F. Remove from heat, cover with a lid and set aside until temperature rises to 160° F before serving.

    3. While chicken is cooking, make the feta by combining feta, yogurt and seasoning in a food processor. Pulse on high while drizzling in the oil. Pulse until you have a smooth consistency, about 20-30 seconds depending on feta. Set aside and keep at room temp while preparing the tomatoes.*

    4. Heat a large skillet (preferably cast iron) over high heat until hot. Add oil, wait until very hot and then add tomatoes. Leave them in the pan, untouched, for 1 minute. You may hear them pop- don’t worry! Turn tomatoes over to blister the other side. Sprinkle with seasoning, stir gently as to not break them and remove from heat.

    5. Place 6 ounces of chicken, 2 T of whipped feta and ½ C tomatoes on a plate and drizzle with 1 T Balsamic Mosto Cotto.

    6. Serve warm and enjoy!
