
Mediterranean Chicken with Herb Whipped Feta and Blistered Tomatoes

Can't you just imagine devouring this chicken with whipped feta and tomatoes?
This low carb recipe features the salty, briny-ness of feta with warm blistered tomatoes and finishes with the sweetness of Balsamic Mosto Cotto.
It's a dish that looks as impressive as it tastes! Quick, easy, delicious and of course, full of BIG BOLD flavor. Indulge guiltlessly!

Ingredients

1 ½ pounds boneless skinless chicken breast in 4 equal size pieces
1 tsp Stacey Hawkins Dash of Desperation Seasoning
4 T Stacey Hawkins Balsamic Mosto Cotto

8 oz Feta cheese
¾ C 2% Greek Yogurt
2 tsp Stacey Hawkins Luscious Lemon Oil
1 T Stacey Hawkins Mediterranean Seasoning

2 t Stacey Hawkins Roasted Garlic Oil
1 tsp Stacey Hawkins Dash of Desperation Seasoning
1 pints grape tomatoes (washed and dried well)
Directions
Season chicken with Dash of Desperation Seasoning.
Spray a large frying pan with nonstick spray and heat over medium high heat. Cook chicken on both sides until lightly browned and a temperature of 150° F. Remove from heat, cover with a lid and set aside until temperature rises to 160° F before serving.
While chicken is cooking, make the feta by combining feta, yogurt and seasoning in a food processor. Pulse on high while drizzling in the oil. Pulse until you have a smooth consistency, about 20-30 seconds depending on feta. Set aside and keep at room temp while preparing the tomatoes.*
Heat a large skillet (preferably cast iron) over high heat until hot. Add oil, wait until very hot and then add tomatoes. Leave them in the pan, untouched, for 1 minute. You may hear them pop- don’t worry! Turn tomatoes over to blister the other side. Sprinkle with seasoning, stir gently as to not break them and remove from heat.
Place 6 ounces of chicken, 2 T of whipped feta and ½ C tomatoes on a plate and drizzle with 1 T Balsamic Mosto Cotto.
Serve warm and enjoy!
