Nobody is too grown-up for a crispy, cheesy tater tot moment. These faux tater tots bring all the golden, crunchy, can’t-stop-eating-them goodness you love—with a veggie-packed little twist that makes them feel extra smart.
They’re quick, easy, and perfect for those nights when you want something fun and comforting that still supports your health-forward goals. Pop them in the oven or air fryer, grab your favorite dipping sauce, and get ready for a snack (or side dish) that will disappear fast.

Ingredients
2 medium zucchini
1 tsp salt
2 large eggs, beaten
¼ C freshly grated Parmesan cheese
1 C grated mozzarella cheese (any style)
1 tsp Stacey Hawkins Dash of Desperation
1 C Stacey Hawkins Italian Infused Panko
ketchup or your favorite dipping sauce
Directions
Coarsely grate zucchini on a box grater and add to a colander. Sprinkle with salt and toss to combine.
Put the colander in the sink or on a plate, then let the zucchini sit for 20 minutes to release its juices.
When finished, transfer to a clean dish towel and squeeze out all the excess liquid.Preheat oven to 425°F. Line a sheet pan with parchment or a silicone baking pad. Lightly spray with nonstick cooking spray or a smear of olive oil.
Whisk the eggs in a large bowl. Add the zucchini, Parmesan, Mozzarella, Dash of Desperation, and Panko. Mix to combine.
By the tablespoon, scoop and form the tots. Place on the prepared pan. Repeat until done. *
When finished, lightly spray with cooking spray and bake until browned and crisp, about 15 minutes. Serve with your favorite dipping sauce.
