Ingredients
1 ½ lbs. boneless chicken, breasts or thighs- sliced horizontally*
1 T flour **
1 T Stacey Hawkins Classic Chicken Seasoning
1 T olive oil or Stacey Hawkins Roasted Garlic Oil for more flavor
1 ½ C half and half ***
2 T Stacey Hawkins Garlic & Spring Onion Blend
4 T freshly grated Parmesan Cheese
4 C fresh spring greens- spinach, baby kale, arugula or a mix
Stacey Hawkins Dash of Desperation Seasoning to taste
Directions
Combine Classic Chicken Seasoning and flour in a bowl. Sprinkle over the chicken evenly.
Heat a large, high-sided skillet over medium heat for 1-2 minutes until skillet is heated through. Add the oil. Add chicken breasts. Cook chicken for 4-5 minutes on one side to let it sear and for that beautiful golden crust to form.
Flip the chicken over, reduce heat to low and let the chicken cook for an additional 5 minutes until cooked through. (If using chicken pieces, this may take less time.) Remove the chicken from the pan and set on a plate. Keep warm
Place the skillet back on the stove over medium heat. Add the half and half (or chicken stock and cream cheese) and the Garlic & Spring Onion seasoning to the pan. Bring to a boil, scraping all the brown bits off the bottom of the pan.
When boiling, add Parmesan Cheese. Reduce to low and stir until cheese melts. Add the greens and stir until they just wilt and incorporate into the sauce. Season with a pinch of Dash of Desperation.
Add the chicken back into the pan with the spinach. Spoon the sauce over the chicken and serve. Enjoy!
