Grilled Chicken with Fresh Strawberry Lemon Dressing a Lean and Green Recipe

Seasonal, fresh strawberries make a wonderful dressing for classic grilled chicken. Serve over fresh greens or alternate vegetables (great over asparagus or snow peas!) for a light and healthy wow factor.

Recipe

Ingredients
1 1/2 lbs – Boneless Skinless Chicken Breast
1 T – Stacey Hawkins Dash of Desperation
1 C – Fresh Strawberries
1 T – Stacey Hawkins Balsamic Mosto Cotto
1/2 tsp – Stacey Hawkins Tricolore Peppercorn
1 pinch – Stacey Hawkins Sassy Sea Salt
4 T – Stacey Hawkins Luscious Lemon Oil
Instructions
Preheat outdoor grill to medium high heat. Sprinkle Dash of Desperation over the chicken and then place it on the hot grill.
Cook chicken 6-10 minutes on each side until done. (Verify using a meat thermometer.) Set aside to cool.
To make dressing, add remaining ingredients to a food processor or blender. Puree on high for 1-2 minutes until smooth.
Slice chicken on a diagonal and drizzle with dressing to serve.
Serve over fresh greens, arugula, asparagus or snow peas. Dressing makes a great stand-alone for other salads too!

    Hi Nicole and thanks for your comment. You are correct in saying that as a part of a Lean and Green program, sugar and fruits are not “allowed.” This is because of their high sugar (carb) content that can throw off the program when eaten in usual serving sizes. However, in the case of this recipe, fruit is used in a scant amount, and the total serving size works out mathematically to be OK as an approved condiment. Condiments need to have less than 1 gram of carbohydrate per serving and you may have up to 3 of them per day. Here, the Tablespoon of dressing meets that parameter. The same is said for our Cinnamon Chipotle seasoning which as brown sugar- the serving size falls WAY under the carb count making it ok as a condiment.     Hi. I am looking at spices and recipes and wondering how optavia compliant when ingredients include fruit, brown sugar, etc? According to optavia 5&1 guide these items not allowed??
