Pomegranate salad with orange balsamic glaze~ a Lean and Green recipe
Who says salad has to be boring? Even when it is a lean and green, medifast recipe! With this decadent, but oh-so-easy combination of flavors, you’ll never look at greens the same way again. The tangy, heart-healthy pomegranate is simply sprinkled over the top of the salad and then everything is gently tossed in a ridiculously luscious orange balsamic dressing (again, so easy to make!)

Ingredients:
6 C baby greens (here I use mesclun mix)
1/4 C pomegranate seeds*
2 T Stacey Hawkins Valencia Orange Oil
2 T Stacey Hawkins Balsamic Mosto Cotto
1 tsp dijon mustard
pinch Stacey Hawkins Dash of Desperation seasoning
Directions:
Place all ingredients except the greens and pomegranate in a large bowl. Whisk for 1 minute until thick. Add greens and pomegranates to the bowl and, using tongs, toss the dressing to coat the salad.
Lean and Green portions: 1 cup of salad is 1 green, 1 healthy fat and 2 condiment options
* Pom seeds net out to about 1 T per serving and are 9 calories and 1g of carbs therefore qualifying them as 1 condiment
