Melt in Your Mouth Cinnamon Chipotle Pork Loin
I love LOVE pork loin for Lean and Green Meals. Much like chicken, the lowly pork loin is PERFECT for taking on incredible flavors that make delicious dinners. Better yet, they're quick and easy!
Pork loin is also a perfect candidate for the Crock Pot. As we all know, there is nothing better on busy nights than to come home to dinner done- especially one so finger licking delicious!
In this simple yet mouth-wateringly delicious dinner, low-fat pork loin takes on a whole new life when crusted with cinnamon, chipotle, and garlic in this 3-ingredient recipe. It truly is a dump it in and walk away kind of dinner. Make a salad & you're done!
Throw and go. Does it get ANY easier? Nope. I promise, it doesn't get more delicious either!
- Place the pork loin in the bottom of the slow cooker.
- Sprinkle with Cinnamon Chipotle Seasoning first, then sprinkle with the Garlic and Spring Onion.
Place the lid on and cook on low for 6 hours or high for 3-4 hours until pork loin reaches an internal temperature of 150° F.
- Remove from the slow cooker, slice and serve.

Be sure to use a pork loin, NOT pork tenderloin (the really thin, small ones usually cryo-vacuumed in a bag). If you have a question or need help, ask the butcher. They'll be able to point out the differences for you.
